Salsa Chicken

Last week I saw a recipe on Kelly's Korner that I decided we should try. It's called Salsa Chicken and it was soooo easy and soooo good!! I'm a sucker for easy, and it's a crock pot meal on top of that so it scores double points! So here's the recipe:

Salsa Chicken

2-4 chicken breasts (I bought a pkg and it had 3 breasts in there)
1 pkg taco seasoning
1 can cream of mushroom soup
1 cup salsa
8 oz. of sour cream

Place chicken breasts (unthawed) in the bottom of crock pot and cover with taco seasoning. Mix cream of mushroom soup and salsa together and pour on top of chicken. Cook on low for 6-8 hours. Before serving mix in the sour cream and let that it heat through. Serve over rice or in taco shells/tortilla's.
I served it over rice (obviously), and Chris mixed his rice in and scooped it with tortilla chips like a dip. I also put shredded cheese on top because I think any thing Mexican needs shredded cheese on top. :-) As for the salsa, I use 3/4 of a cup of mild picante sauce and a little more than 1/4 a cup of the Great Value white corn and black bean salsa. The black beans and corn were a nice touch. Also, when I got home (before adding the sour cream) I stirred it and kind of shredded up the chicken. Overall, a great dish that will go in my collection! Oh, and it was approved by this 1 year old!

  2. I'll have to try this. I only cook in the crock pot these days and I'm a sucker for anything that doesn't require chopping! Have you ever checked out http://crockpot365.blogspot.com/? I get tons of crock pot recipes from there. The taco soup is my favorite.
